Ingredients
1 lb extra lean ground beef
1 medium onion, chopped
1 medium green pepper, chopped
1/4 cup Italian Dressing
1 can (19 fl oz / 540 mL) diced tomatoes, undrained
1 can (19 fl oz / 540 mL) kidney beans, drained, rinsed
I can chick peas (19 fl oz / 540 mL) drained and rinsed ( Nancy’s tip = add this option for extra fibre!)
1/2 teaspoon garlic powder
1/2 teaspoon chili powder ( Nancy’s tip = double this – to really heat things up! )
3/4 cup shredded cheese

Directions
Cook meat, onions and peppers in dressing in large saucepan on medium heat 8 minutes or until meat is cooked through and vegetables are tender, stirring frequently.

Add tomatoes with their liquid, the beans, chick peas ( if used), garlic powder and chili powder; mix well.
Bring to boil.
Reduce heat to medium-low; simmer 10 minutes, stirring occasionally.

Serve topped with the cheese.
